Fresh garlic and herb butter is a perfect dressing for pan-seared steaks, cast iron cooking, or basting meat for extra flavorful browning. While you can make garlic herb butter with prepackaged garlic and dried herbs, we strongly recommend using fresh (or freshly roasted) garlic cloves and chopping fresh herbs just before preparing this butter: dried herbs take longer to cook, and there’s no substitute for the bright flavors of fresh garlic and herbs.

The Meatery Kitchen
Ingredients
-
4 tablespoons (half stick) unsalted butter
-
1 tablespoon fresh garlic, grated or pressed
-
1 tablespoon fresh thyme, stems removed and minced
-
1 tablespoon fresh rosemary, stems removed and minced
-
1 fresh bay leaf, stem removed and minced
-
1 tablespoon lemon juice
Directions
In a small skillet, melt butter over medium heat.
Add garlic, lemon juice, and herbs and cook until herbs soften and become fragrant, about 30 seconds.
Recipe Note
- The key to successful cooking with butter is to use low to medium heat: if the temperature of the butter reaches its smoke point, it will burn. Use clarified butter if you plan to cook with higher heat.
- Try this recipe with other fresh herbs such as sage, dill, and oregano.
