1 pound boneless beef short ribs

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon unsalted butter

3 cloves garlic, minced (3 teaspoons minced garlic)

2.5 cups beef stock
Directions
Trim excess fat from short ribs and pat dry with a paper towel. Season with salt and pepper and set aside.
Turn Instant Pot to sauté. Once the screen reads “HOT,” add butter and allow to melt.
Add short ribs and sear until browned on the first side, about 7-8 minutes. Then, flip short ribs and sear other side for about 3-4 minutes. Remove ribs and set on a plate.
Add garlic to the Instant Pot. Cook for one minute, then add a splash of beef stock to deglaze bottom of pot, using a wooden or silicone spoon to scrape any bits off of the bottom.
Turn off sauté function and add ribs back to the pot. Pour in beef stock until ribs are just covered.
Place lid on Instant Pot and seal valve. Set to pressure cook on high for 35 minutes, followed by a natural release of 15 minutes.
After the natural release time is up, carefully turn valve to vent, then open pot. Serve these garlic butter Instant Pot short ribs topped with extra sauce from the pot.
Recipe Note
Make a sauce (optional): After removing the ribs from the pot, you can turn your Instant Pot to the Soup setting and bring the leftover liquid to a boil to reduce and thicken the stock into a sauce to serve with the ribs. This can take up to 30 minutes. The sauce will likely be salty, so a small amount goes a long way.
Using Slow Cooker or Crock Pot: brown short ribs with garlic, then cook on low for 10 hours or high for 5 hours.
